Hello Emma! This is a cozy South African favourite. I've come up with a cheat's recipe for it which everybody loves.

Pumpkin fritters

1kg pumpkin (cooked , mashed and drained of any excess moisture) It feels like an obscene amount of pumpkin, but therein lies the secret.

1 box pancake mix of your choice

Cinnamon

Sugar

Mix up the pancake mix according to instructions, and then add the pumpkin and combine. Fry tablespoon-sized amounts in an oiled pan until fritters are browned on the outside. Once cooked, sprinkle cinnamon and sugar mix onto the fritters while they are still hot.

They are beyond cozy, and you will feel nostalgic for them even as you eat them.

Oh my gosh! The chocolate cars!!! My son and daughter (both in college now) are crazy car heads. Those are so perfect! Lambo for her, and beemer for him, or maybe the porsche. Decisions!

I'm making these tonight because it's cold and they are so full of warm spices they just feel like the perfect fall meal:

I make them a little differently depending on how lazy I'm feeling. I've always been too lazy to soak the breadcrumbs in milk (Just why?) so I use panko and 2-3 tablespoons of milk. I've never put saffron in the sauce because I'm out and keep forgetting to buy it or getting palpitations when I see how much it costs. And I just skip any of the spices I don't have in the meatballs. I mean, there are like a hundred. Who's going to miss one? But these are so, so good! And very forgiving of my shortcuts and short attention span. I've even skipped the browning all together and just plopped the meatballs a few at time into the sauce and let it simmer a bit longer. Oooh, and regular couscous is faster than pearled, so I usually do that.
